泰式凉拌蘆柑沙拉 Tangerine Thai salad

农历新年大鱼大肉,疯狂放纵后难免体重也会随之而上升。冰箱里还摆着朋友上门来拜年一大堆的芦柑,若要一颗一颗这样吃还真的不知要吃到何时才能把它给消灭掉。将一半的芦柑挤成果汁,放进冰箱里冰一冰。剩下的就弄成泰式沙拉,预先将凉拌酱给调好,想吃时就加些花生和虾米一起搅拌调味,简单又方便,而且清爽无负担的凉拌沙拉就完成了。凉拌沙拉可以当个前菜或是下午茶,再不烫些冬粉弄成凉拌冬粉芦柑沙拉,又是道既有饱足感又可以减肥的一餐了。如果家裡沒有剩下的蘆柑也可以用橘子來替代。

凉拌酱材料:

辣椒1根(切末)
蒜头
1颗(切末)
红葱头
2颗(切末)
柠檬叶
1茶匙(切丝)
3大匙
鱼露
3大匙
亚参汁
3大匙

做法:

1.将辣椒、蒜头、红葱头、柠檬叶、糖、鱼露和亚参汁放入调理机打成酱备用。

橘子3
香菜
1大匙
小辣椒

花生碎

虾米

凉拌酱

做法:

1.橘子去皮,切成小块状。

2.将其余材料一起加入拌匀。

3.撒上香菜即可。

Sauce ingredients:

1 chilli
1 garlic

shallots

1tsp lime
leaf (slice)

3tbsp
sugar

3tbsp
fish sauce

3tbsp
tamarind juice

Method:

1.Put chilli,
garlic, shallots, lime leaf, sugar, fish sauce and tamarind juice into food
processor and blend well.

Salad ingredients:

3 tangerine
1tbsp corianders

2 chillies

10g peanuts

10g dry shrimp

3tbsp sauce

Method:

1.Remove tangerine skin and cut
into small pieces
.
2.Add in chillies, peanuts, dry shrimp and mix well.

3.Garnish with
coriander and ready to serve.
