網餅佐榴槤蘸醬 Durian in coconut milk with roti jalal

小時候,榴槤是季節性水果,引頸長盼一整年才能嘗得到國王的滋味。現在,榴槤成了全年都吃得到的水果,這也讓人少了那季節性的期待。週末下午茶吃膩了西式的蛋糕餅乾,忽然想來點不一樣的。將昨日留在冰箱里的榴槤取出,將榴槤肉和椰奶弄成了蘸酱,調好后继续留在冰箱里冷藏。既然是不一樣的下午茶,念頭一轉,將原定的法式煎餅,做成印度煎網餅。黃色網狀的煎餅,外形美麗,吃時搭配乳白色的榴槤蘸醬,入口冰冰涼涼,咸咸甜甜的,感覺很奇妙。簡單的煎餅,加些巧思,就可以化平凡為神奇。這煎餅也很適合在聚會時享用,讓朋友們聊得開心,吃得開心。

榴莲蘸酱材料:

榴槤肉50
椰奶
50ml
1大匙

網餅 Roti jala 材料:

中筋麵粉1

牛奶
1
½
½茶匙
黃姜粉
½茶匙
1茶匙

做法:

1. 將所有榴槤蘸醬材料攪拌均勻。下鍋煮五分鐘即可。

2.將所有網餅材料攪拌均勻調成麵糊,過篩備用

3. 將平底鍋預熱,抹層薄油

4. 將麵糊倒入模型中,將麵糊呈網狀的倒入鍋中,煎至熟即可。

Durian dipping sauce ingredients:

50g
Durian
50ml Coconut milk

1tbsp
Sugar

Roti jala ingredients:

1cup all
purpose flour
1 Egg

1cup Milk

½cup
Water

½tsp Salt

½t sp
Turmeric powder

1tbsp
Oil

Procedure:

1. Add
all durian dipping sauce ingredients in a pot and cook on low heat for 5minutes, stir
occasionally
.

2. Mix all roti jala ingredients until combined and sieve it.

3.
Grease the oil in pan over medium heat.

4. Spoon batter into a roti jala mould and in a circular
motion, form a thin lacy pattern in the pan, cook until set.
