玉米片小蛋糕 Corn flakes cupcakes

很多人廚房櫃子裡,都會有一盒玉米脆片。這小東西可以當小朋友的早餐、宵夜甚至是餐前充飢解饞。除此之外,它還可以當烘焙蛋糕餅乾的材料。之前嘗試過將玉米脆片給拌入麵糊裡,烤成小蛋糕。剛出爐鬆軟的蛋糕體,搭配玉米脆片那口感,雖然很不錯,但就覺得少了什麽似的。過後,嘗試了在蛋糕上加了奶油玉和米脆片一起烘烤。出爐的小蛋糕多了股更濃郁的奶油香氣,玉米脆片也變得更香脆。蛋糕體也因為減少了玉米脆片的用量,嘗起來更單純,整體口感更富有層次。

材料:

奶油 20
沙拉油
40
細砂糖
40
低筋麵粉

蘇打粉
1/4茶匙
玉米脆片

做法:

1.奶油軟化後,將20克玉米脆片加入拌勻,即為奶油玉米片。

2. 將蛋和細砂糖拌勻,加入沙拉油打至松發。

3.將麵粉、泡打和剩餘10克玉米片加入拌勻,即為麵糊。

4.將麵糊倒入模型內,在表面撒上適量牛油玉米片。

預熱烤箱,以170烤約20~20分鐘即可。

Ingredients:

20g
Unsalted butter, softened

40g Salad
oil

40g Granulated
sugar

100g Low
gluten flour

2 Eggs

¼ tsp
Baking Powder

30g Corn
flakes

Procedure:

1.
Mix cream butter with corn flakes, set aside.
2.
Egg and sugar until light and fluffy.
3.
Add salad oil into step 2 and beat until smooth.
4.
Sift flour and baking powder and stir in corn
flakes

from step 1 into step 3 until well combined
.
5.
Spoon the batter into cases and sprinkle with some corn
flakes

from step 1.
6. Bake in pre-heated oven at 170 for 20~25
minutes
.
