台式月餅 Taiwanese Style Mooncake

逐漸被遺忘的中秋,月餅更慢慢變成了季節性的食品,傳統對年輕一輩來說好像有點模糊。小時總是很期待中秋節的到來,一大班小朋友提著燈籠四處逛﹐更懷念中學時期的中秋月光燒烤派對。逐漸長大,月餅好像少了那原有的意義,加上外頭一顆月餅的價錢還貴過一頓飯,真叫人掙扎。但爲了滿足自己的口腹之欲,王子我還是會躲進廚房自己弄些不同口味的月餅來嘗鮮。其實,月餅並沒想像中難,少了煮糖漿的步驟,台式月餅比起粵式月餅更容易操作。台式月餅的餅皮和凤梨酥有點相似﹐帶著淡淡的奶香﹐口感酥酥脆脆﹐較一般傳統粵式月餅不同。站在烤箱前,不時還窺看烤箱里的進度,期待著出爐的時刻。看著剛出爐的月餅,或許第一次賣相并不那麼完美,但那份滿足與感動是無法形容的。今年給家人和朋友來個小驚喜,自己動手烤個滿滿心意的手作月餅,也祝大家中秋快樂。

餅皮:

无盐奶油50
糖粉
40
水麦芽糖

低筋麵粉

奶粉

苏打粉
  1/4茶匙
蛋黄

做法:

1.把无盐牛油放在室温中待软化后,加入糖粉及水麦芽糖打至松发,再把蛋液分次加入后,打成牛油糊。

2.接着把麵粉、奶粉和苏打粉过筛后,加入奶油糊中拌匀,即为麵团。

3.把麵团放在温室下松弛30分钟后,分成10等份。

4.接着把红豆与瓜子拌匀后,也分成10等份,然后把内包入餅皮中,再放入月餅模内压制成形后扣出;重复此步骤直到用完所有的材料为止。

5.预热烤箱,以170烤约8分钟后取出,在月餅表面刷上蛋黄液,再继续烤约5分钟即可。

贴士:

瓜子預先烤5分钟,備用。
紅豆可依个人喜好以其它口味内馅替代

Skin ingredients:

50g Unsalted butter, softened
40g Icing Sugar

30g Maltose

150g Low Gluten Flour

1 Egg

10g Milk Powder

¼ tsp Baking Soda

Filling:

300g Red bean paste
30g Melon Seeds

Procedure:

1. In a mixing bowl, cream butter, icing sugar and maltose until light.
2.
Beat the egg and gradually mix into step 1.
3.
Sift together flour, milk powder and baking soda, stir into step 2
mixture until well blended.

4.
Let the dough sit at room temperature for 30 minutes.
5.
Divide dough into 10 equal portions; Mix well lotus paste and melon
seeds, divide it into 10 equal portions.

6.
Wrap dough around filling. Press into mooncake mould, knock out.
7.
Bake in pre-heated oven at 170
for 8 minutes, then brush them with egg wash and continue to bake for 5 minutes.

Tips:

Roast melon seeds for 5 minutes before use.

ed bean paste with any other flavors
mooncake paste.
