福氣好彩頭~港式萝卜糕 Hong Kong style radish cake

除了那一般的傳統年糕,蘿蔔糕可說是很多家裡過年會出現的另一道咸口味的年糕。蘿蔔糕有著好彩頭的含意,所以過年爲了討個好彩頭當然就不可錯過的。小王子我喜歡打開蒸籠,躲藏在裡頭被那蒸騰的煙霧所包圍的蘿蔔糕,朦朧之中還是一樣白晰誘人的朦朧美。出爐的蘿蔔糕有著一股潔淨的清香,那麵糊和那配料整無孔不入的癡纏著。一片片切得方方正正,看似以事無爭的蘿蔔糕,裡頭均勻散佈著如金子般的臘腸與蝦米,額外養眼。若喜歡還可以將蘿蔔糕下鍋煎至兩面金黃,吃起來多了酥脆焦香。軟硬適中的蘿蔔糕,裡頭澎湃的餡料,嚼起來就是那麼的豐滿柔軟,吃後絕對福氣好彩頭。

材料:

粘米粉260克
玉米粉20克
太白粉20克
水260毫升
蘿蔔300克(刨絲)
臘腸80克(切丁)
蝦米30克(切碎)

調味料:

细砂糖1大匙
盐 1茶匙
胡椒粉1茶匙
芝麻油1茶匙
油蔥酥1大匙

Ingredients:

260g rice flour
20g corn flour
20gm potato flour
260ml water
300gm radish (grated)
80gm chinese sausage (chopped)
30gm dried shrimp (chopped)

Seasonings:

1tbsp granulated sugar
1tsp salt
1tsp pepper
1tsp sesame oil
1tbsp shallot crisps

做法:

1.将粘米粉、玉米粉、太白粉和水攪拌均勻。
2.在鍋中燒熱油,放入蘿蔔、臘腸和蝦米拌炒均,起鍋備用。
3.取600毫升水加入調味料放入鍋中,以中火煮至滾;和做法2一起倒入做法1中攪拌。
4.將面漿倒入容器中,以大火蒸約40分鐘即可。

Method:

1. Mix rice flour, corn flour, potato flour and water in a big bowl until well combined.
2. Heat oil in pan, stir in grated radish, Chinese sausage and dried shrimp to stir-fry until well-mixed, remove from heat and set aside.
3. Combined 600ml water with seasoning in pot, bring to boil and stir in into big bowl together with step 2 and mix well.
4. Spoon batter into case, set in steamer and steam over high heat for 40minutes.
