酸菜燒魚 Chinese sauerkraut braised fish

北馬人的口味,一直比中南馬人來得重。無他,北馬和泰國毗鄰,酸辣咸香的菜肴想來是北馬人餐桌上的人氣佳餚。王子我來自北馬,很愛吃酸辣,閒來沒事就喜歡煮些酸酸辣辣的醬汁存放在冰箱里。這樣的話想吃濃重酸辣的菜肴時,就可以取出燒菜。省下許多處理醬料的時間了。某天下班,忽然想吃魚,轉進市場買了條魚。回到家將清理乾淨的魚下鍋煎炸,再把冰箱裡的酸菜醬拿出煮開。過後,將炸好的魚放入一起燒。不到10分鐘,一道酸辣咸香又下飯的酸菜燒魚就完成了。簡單快速的晚餐,吃起來肯定比起外頭的更滋味,更帶滿足。

醬材料:

酸菜100克(切絲)
醬油
2大匙
料酒
2大匙
1大匙
辣椒
3根(切碎)
蒜末
2大匙
姜末
2大匙
蔥末
2大匙
太白粉
2茶匙
1大匙
5大匙

做法:

1. 在鍋中燒熱油,爆香辣椒、蒜、姜和蔥

2. 加入酸菜翻炒均勻。

3. 加入酱油、料酒、醋、太白粉、糖和水拌匀,大火煮至滚即可。

酸菜鱼:

材料:

150毫升

做法:

1.在鍋中燒熱油,放入魚煎炸至金黃,撈起濾干備用。

2.將醬和水倒入鍋中拌勻,煮至滾。

3.将魚加入,繼續煮約5分鐘即可。

Sauce ingredients:

100g Chinese sauerkraut (shredded)
2tbsp soy sauce
2tbsp cooking wine
1tbsp vinegar

3 chillies (chopped)

2tbsp garlic (chopped)
2tbsp ginger (chopped)
2tbsp spring onion (chopped)

2tsp potato starch

1tbsp sugar

5tbsp water

Procedure:

1. Heat oil in pan, sauté chillies, garlic, ginger and spring onion until fragrant.
2. Add
in
Chinese sauerkraut and stir well.
3.
Add
in soy sauce, cooking wine, vinegar, potato starch, sugar and water, mix well
and bring to boil
.

1 fish
5tbsp sauce

150ml water

Procedure:

1. Heat oil in pan, fry fish until golden brown, drain well and set aside.
2.
Stir sauce and water in pot, stir well and bring to boil.
3.
Add in fish and continue cook for another 5minutes.
