椰絲麵包 Coconut Bread

最近有點迷惘有點失落,有點不知所措。讓自己沉澱一段時間後開始整頓一下思緒。在感覺快被壓得透不過氣時,我會選擇躲進廚房,煮個麵或揉個麵團也好,就靜靜的待在裡頭。

走進廚房,揉了麵團等著麵團第一次發酵。我決定弄個甜的內餡,就椰絲吧。將椰絲、砂糖和奶油拌勻,椰絲內餡就搞定了。

將第一次發酵後的麵團包入椰絲內陷,再進行第二次發酵。喜歡聽著歌曲,靜靜觀望著慢慢變大的麵團。最後刷上蛋液,進烤箱烤就ok了。

材料:

  • 高筋麵粉 240克
  • 底筋麵粉 60克
  • 酵母 4克
  • 鹽 5克
  • 細砂糖 40克
  • 雞蛋 1個
  • 水 150克
  • 奶油 30克

餡料:

  • 奶油 60克
  • 砂糖 40克
  • 椰絲 80克

1.將奶油、糖和椰絲拌勻,冷藏備用。

2. 將所有材料放入攪拌盆內(奶油除外),攪拌至麵團光滑 。

3. 加入奶油,繼續攪拌20分鐘至麵團光滑。

4. 讓麵團發酵至兩倍大。

5. 取出麵團拍出空氣,分割成8份。

6. 將麵團擀平,包入內餡,整成橄欖型。表面劃一刀。

7. 讓麵團進行第二次發酵40分鐘或1.5或2倍大。

8. 刷上蛋液。預熱烤箱,以180℃烤约12-15分钟即可。

Ingredients:

  • 240g High protein flour
  • 60g Low protein flour
  • 4g Instant yeast
  • 5g Salt
  • 40g Caster sugar
  • 1 Egg
  • 150g Water
  • 30g Butter


Filling:

  • 60g Butter
  • 40g Sugar
  • 80g Grated cocobut

Procedure:

  1. Mix butter, sugar and grated coconut well, put into fridge and set aside.
  2. Place all ingredients (except butter) into the mixing bowl, knead for 10minutes.
  3. Add butter and continue kneading for 20minutes until the dough is smooth.
  4. Proof the dough for 1hour or until double in size.
  5. Divide the dough into 8 portions.
  6. Roll the dough and wrap with filling. Shape it and make a straight cut on top.
  7. Let it proof for the second time for 40minutes or until 1.5-2 times in size.
  8. Brush with egg. Preheat the oven on 180℃ and bake for 12-15minutes.
