逛菜市場帶了幾顆的紫薯回來,將紫薯去皮后入鍋蒸熟。其實是想弄個桂花酒釀紫薯丸子的,但翻了大半個廚房都找不到桂花,興致大減唯有弄成煎餅好了,不然那紫薯泥又得擱置在冰箱不懂多少個夜晚了。
這次買的紫薯本身並沒有什麼甜度,所以加了一些些的糖。將所有材料放入盆中,分次加入椰奶。因為紫薯濕度不同,所有分次加入椰奶,直到揉成麵團就可以了。
煎至兩面金黃的椰香紫薯餅,口感軟糯帶點椰子香氣,若想要椰子香氣更濃郁些可以裹上椰絲再下鍋煎。泡上杯紅茶,搭配這椰香紫薯餅還真的蠻不錯的。
材料:
紫薯泥 250克
椰奶 50-80毫升
糯米粉 100克
糖 2大匙
做法:

250g Mashed sweet potato
50-80ml Coconut milk
100g Glutinous flour
2tbps Sugar
Procedure:
- In a big bowl, mix glutinous flour, sugar, sweet potato and coconut milk. Knead well to form dough.
- Divide dough into small portion and flatten it.
- Heat pan over low heat, place dough in and pan fried over low heat.
- Continue cook till the pancake both side turn to golden brown, ready to serve.
