椰香紫薯餅 Coconut Sweet Potato Cake

逛菜市場帶了幾顆的紫薯回來,將紫薯去皮后入鍋蒸熟。其實是想弄個桂花酒釀紫薯丸子的,但翻了大半個廚房都找不到桂花,興致大減唯有弄成煎餅好了,不然那紫薯泥又得擱置在冰箱不懂多少個夜晚了。

這次買的紫薯本身並沒有什麼甜度,所以加了一些些的糖。將所有材料放入盆中,分次加入椰奶。因為紫薯濕度不同,所有分次加入椰奶,直到揉成麵團就可以了。

煎至兩面金黃的椰香紫薯餅,口感軟糯帶點椰子香氣,若想要椰子香氣更濃郁些可以裹上椰絲再下鍋煎。泡上杯紅茶,搭配這椰香紫薯餅還真的蠻不錯的。

材料:

紫薯泥 250克
椰奶 50-80毫升
糯米粉 100克
糖 2大匙

做法:

1.將糯米粉、糖、紫薯泥放入碗中。

2. 加入椰奶揉成麵團。

3.將麵團分成等分,搓成圓形后稍微壓扁。

4. 燒熱平底鍋倒入少許油,將麵團下鍋煎至兩面金黃即可。

Ingredients:

250g Mashed sweet potato
50-80ml Coconut milk
100g Glutinous flour
2tbps Sugar

Procedure:

  1. In a big bowl, mix glutinous flour, sugar, sweet potato and coconut milk. Knead well to form dough.
  2. Divide dough into small portion and flatten it.
  3. Heat pan over low heat, place dough in and pan fried over low heat.
  4. Continue cook till the pancake both side turn to golden brown, ready to serve.
