紅棗年糕 Red Dates Nian Gao

年二十八,該烤的餅乾應該都烤完了吧,雖然自己什麼都沒烤,但至少滑臉書不再有那滿滿的年餅照,不然還真的光看都飽了。雖然年餅的照片少了,但年將近,除了那些上菜市場買菜備年菜的照片,就是那發糕年糕的照片了。那天弄了紫薯年糕,今日心癢癢的弄了紅棗年糕。

將紅棗給燉個30分鐘,再打成泥加入麵糊里。本是該將紅棗給過篩的,但基於懶所以省略掉了,可是成品出來其實沒太大影響。

放涼后忍不住試了小的紅棗年糕,味道不錯甜度不會太甜。因為用的是糯米粉,所以還是會夾帶些粉味,下次有閑再自己泡米磨米。蒸完年糕,繼續吃吃喝喝過年去吧。祝大家新年快樂,多吃少胖。

材料:

糯米粉500克
紅糖250克
椰奶 200毫升
水 400毫升
紅棗泥 180克
紅棗 60克
水 1杯

做法:

1.將紅棗和1杯水入鍋燉煮30分鐘,打成泥備用。

2.將糖,水和椰奶拌勻,小火煮至糖溶化;放涼備用。

3.將糖浆倒入糯米粉中,拌勻。

4.將麵糊液過濾。

5.將紅棗泥加入,拌勻。

6.在模型內刷上少許油。
7.將麵糊倒入容器中,以大火蒸約1.5小時即可。

Ingredients:

500g glutinous rice flour
250g brown sugar
200ml coconut milk
400ml Water
180g Red dates paste
60g Red dates
1cup Water

Procedure:

  1. Place red dates with 1 cup of water into a double-boiler jar.
  2. Place in the steamer to double-boil for 30minutes. Remove from heat and blend well.
  3. Add sugar, water and coconut milk in pot, cook over low heat till sugar disolve.
  4. In a big bowl mix well glutinous rice flour, pour in coconut milk mixture and mix well.
  5. Run the mixture through a fine sieve.
  6. Add in red dates paste and stir well.
  7. Brush the mould with some cooking oil.
  8. Transfer batter into case, set in steamer and steam over high heat for 1.5hours.
