肉乾條 Dried Meat Sticks

過年,嗑肉乾喝啤酒是多麼讓人過癮的事情。對抗這萬物皆漲的城市,若過年不吃肉乾還真的有點沒意思,所以還是覺得勤快些自己動手弄一弄。肉乾做法其實也並非想像中複雜,就只需把肉腌製好后烤熟就成了。而且自家弄的肉乾還可以在口味上做些調整,而且成本真的比外頭賣的來的便宜太多了。

數一數,每逢過年王子我光花費在肉乾上的數目還真的有點驚人。也因自己抵擋不了新品,所以一手滑就會敗上數百塊錢的肉乾。自己動手烤肉乾,一次做少份量,吃完再烤絕對新鮮。

這次把肉乾弄了條狀,吃起來更方便,也因如此,一下子不小心就把它給嗑光了。刷上一層蜂蜜的肉乾,多了股清甜,但也因為表層較為濕潤,保存期限也會縮短。

材料:

豬絞肉600克
糖130克
紹興酒 2大匙
魚露 1大匙
醬油 2大匙
胡椒粉 ½茶匙
油 2大匙

做法:

1.將豬絞肉、糖、魚露、紹興酒、醬油、胡椒粉和油拌勻,放入冰箱腌製隔夜。

2.將肉碎放入塑膠袋裡,擠成條狀。

3.預熱烤箱,以170℃烤約15分鐘。

4.取出肉條,在表面刷上蜜糖,繼續烤約5~10分鐘即可。

Ingredients:

600g minced pork
130g granulated Sugar
2tbsp shaoxing wine
1tbsp fish sauce
2tbsp soy sauce
½tsp Pepper
2tbso cooking oil

 Procedure:

1. In a mixing bowl, minced meat, sugar, fish sauce, shaoxing wine, soy sauce, pepper and oil until well combined, keep in refrigerate and marinate overnight.
2. Fill plastic bag with minced meat, and pipe it out.
3. Bake in pre-heated oven at 170℃ for 15minutes.
4. Brush meat sticks with honey and continue roast for another 5~10minutes.
